The local areas which the Michelin-starred chef knows so well are the inspiration for his subtle and balanced gourmet dishes in which each product adds a unique touch and an authentic flavour. From the ash-coated cheese of the Doubs to the game of the Jura region’s forests, from local fruit to smoked fish and charcuterie, the chef has an extensive gourmet repertoire. As if by magic, Pierre Basso-Moro creates refined and elegant dishes.

The gourmet restaurant welcomes diners to three different spaces. The Salon du Marquis de Germigney has a sophisticated and welcoming feel with its parquet floor, its chandeliers and shades of red, black and white beneath its age-old vaulted ceiling, while diners can marvel at the high ceilings, plenty of natural light and direct views of the gardens in the Château’s former orangery. In the summer, savour the fresh breeze as it ruffles the leaves of the plane trees in the grounds and the scent of white hydrangeas nearby on the vast terrace. Whatever the season, whatever the event, the pleasure of a lunch or a dinner at the gourmet restaurant La Table de Pierre remains the same.

Our favourites: Bresse chicken from Ferme Roussel-Voisard, cooked in a terrine with vin jaune and served in two courses; langoustine in two courses with vin jaune butter and salted butter caramel ravioli.

You can see the wine cellar of our gourmet restaurant from the glass balcony in the dining room. It’s a magical place, inspired by vineyards, terroir and the hard work of wine-makers. This is a superb setting in which to store our carefully chosen wines in the very best conditions. Fantastic wines from the Jura region and famous vintages are stored alongside wines for everyday enjoyment and for sharing. Our sommelier Arnaud Faivre is here to advise you on the best wines to accompany the dishes of our Michelin-starred chef Pierre Basso-Moro.
