Discover Chef Francesco Di Marzio | Maison Rosella

Italian-born Chef Di Marzio has traveled the world sharing his culinary talent in prestigious destinations and restaurants such as Benu* in San Francisco, The Greenhouse** in London, Amber** in Hong Kong, and most recently Singapore, where he was honored with a Michelin star for his outstanding work at La Dame de Pic at the Raffles.  Today, he has moved to Château de Germigney to offer a new gastronomic experience in the heart of the magnificent Jura region.

 

What was the starting point for your passion for cooking, and what people or experiences had the greatest influence on you during your childhood?

 

I started cooking at an early age with my grandmother, who passed on this passion to me. She always cooked with love, and as I say now, cooking is an act of love.  After my grandmother left, my mother inherited this passion and her culinary skills. In my eyes, she has become the best cook there is. Of course, when we cook together at home, we sometimes tease each other, (but it's always with a laugh). I love cooking with my mother for ourselves and for the people we love.

 

What drew you to Château de Germigney with Maison Rosella?

 

When I discovered the château, my heart was instantly won over. It evokes in me feelings of family and connection to nature, which is why I chose this place to establish my restaurant and name it after my mother. I want our guests to feel right at home, with the highest levels of hospitality and a warm atmosphere.

 

What kind of gastronomic experience would you like to offer your guests when they visit Maison Rosella?

 

The gastronomic experience we offer is a true voyage through my culinary journey. It has its roots in Italian cuisine, skilfully combining French techniques and ingredients. In addition, we add a subtle Asian touch to share with you my memories and experiences from Hong Kong and Singapore.

Upon entering our home, our guests are welcomed and pampered as if they were part of our family.
